Drowning in Squash
Some quick highlights from the MinIsland these past few weeks before I give you some recipes to get rid of the squash that's piling up on your counter (or is that just me?).
Built some tomato cages
Started a research project that should be my first (of three) chapters
Had to start my project over when my plants developed weird leaf morphologies
Made mango jam
Got a bunch of squash (since this picture, we've tripled in squash)
Tried to pickle some squash. It turned out awful because I, in part, made up the recipe.
Harvested some soup beans (black eyed peas, pintos and black beans)
And we finally...(finally!)....got our first tomatoes in!
Recipes as promised.
Zucchini bread (from my Nene)
INGREDIENTS:
1 cup oil
2 cup sugar
3 eggs
2 cups of flour
2 cups of grated
zucchini (some wiggle room)
2 tsp cinnamon
1 tsp baking
soda
½ tsp salt
1 tsp vanilla
½ tsp baking
powder
Vegan
substitute:
Substitute 1 tbs
of ground flax seed and 3 tbs of water for every egg
INSTRUCTIONS:
Mix the sugar
into the oil.
Mix the egg or
ground flax seed in
Add the
cinnamon, vanilla and zucchini.
In a separate
bowl, mix the flour, baking soda, baking powder and salt.
Stir the flour
into the zucchini mixture a little at a time.
Pour mixture
into two bread pans.
Bake at 350 for
45 mins (if use flax seed, bake for 1 hour).
Optional Vanilla Maple glaze
INGREDIENTS:
¼ cup of maple
syrup
2 tbs of butter
1 tsp of vanilla
1 tsp of
cinnamon (optional)
Powdered sugar
INSTRUCTIONS:
Melt the maple
syrup and the butter together in a small pan
Remove from heat
and stir in the cinnamon and vanilla
Add powdered
sugar a little at a time while constantly stirring until desired consistency
reached.
Pour over cooled
loafs removed from pan OR
Pour over hot
loaves if plan to serve from pan
Squash Fritatas
INGREDIENTS
(everything is optional except the squash)
1 small squash
¼ white or red
onion
1-2 garlic
cloves
¼ cup shredded
cheddar cheese
1 jalapeño
1 dried cayenne
½ tsp of coriander
flour
INSTRUCTIONS
Heat a pan with
enough oil to deep fry until the oil is a temperature of 350F
Carefully grate the
squash without grating your fingers and leave to dry for at least 15 mins
Cut the onions,
garlic, jalapeno, and cayenne as fine as possible
Mix everything
together except the flour
Add flour a
little at a time until you are able to squish the mixture together in a patty
without it falling apart
Remove 1-2 tbs
of mixture and squish into patty
Once oil is the
right temperature, drop the mixture in and allow to fry until golden (time
varies…and I can’t remember how long it takes. Always longer than I think it
will be.)
When finished,
lightly salt with seasoning salt and put a dab of pepper jelly on top (optional…but
please, please try it!)

Squash Recipe that Sam Actually Liked!!
INGREDIENTS
1 small-medium
squash (diced)
¼- ½ of a red
onion
1 banana pepper
garlic powder
(to taste)
onion powder (to
taste)
Cajun seasoning (to
taste)
1 tablespoon of
butter
Additional oil
as needed
Add ingredients
in a pan with butter and sauté until the squash is soft but still firm. Add
additional oil if mixture gets too dry and starts to stick to the pan.
When done,
sprinkle with parmesan cheese and a mixture of your favorite shredded cheese
(or cheeses).
