Rylee: One Month

Rylee is officially one month old. I can't believe she is so big already! A few of you requested stats from her last appointment. She weighed 7 lbs 12.5 oz and grew 3/4 of an inch (she is now 19 1/4 inches tall).  


Recent highlights: 


Rylee took her first bath. She loves warm water.



She cuddles. 




She enjoys it when Daddy feeds her (look at those sleepy eyes!). 




She wouldn't fall asleep until we brought her into the bathroom to iron with us. 


She likes her bouncy seat--although it doesn't bounce hard enough (it's supposed to be an automatic bouncer). 




Sometimes she will only sleep in her carrier. As a busy mom, I have to improvise. 



She is starting to smile when she's awake (though, still not on purpose). Click here to see her laughing in her sleep. It's the cutest thing ever!

The chickens are laying at top speed again. 


Pippin climbed into the chicken coop. 


I started teaching again and made my students Apple Banana Bread so they will love me. I made two loaves for a room of about twenty people, and they ate all but this much. 




Maple Glazed Banana Bread

Ingredients
Bread 
1/2 cup butter, softened
1 cup sugar
2 eggs
2 cup all-purpose flour or bread flour
1 tsp baking soda
1/4 tsp salt
3-4 medium or large bananas
2 Tbsp brown sugar
1 1/2 tsp vanilla extract
1 tsp ground cinnamon
                        
Maple Glaze 
1/4 cup butter
1/2 cup maple syrup
1 c powdered sugar
1/2 tsp vanilla extract
1/2 tsp ground cinnamon

Instructions
      1. Preheat the oven to 350. Grease one 9x5 pan or two 8x4 pans.
      2. In a small bowl, mash bananas, brown sugar, vanilla extract, and ground cinnamon.
      3. In a large bowl, cream butter and sugar together until light and fluffy.
      4. Add in eggs and beat until mixed.
      5. To the wet ingredients, sift in flour, baking soda, and salt.
      6. Stir until just combined.
      7. Pour in mashed bananas, and mix until combined.
      8. Bake at 350 for 1 hour minutes
      9. Allow to cool

Glaze 
      1. Melt butter, maple syrup, vanilla extract, and cinnamon over low heat. Once melted together, pull off the heat. Sift in powdered sugar, and whisk until fully combined. Allow to cool for 8-10 minutes so the glaze can thicken.
      2. Once the glaze has thickened, give it a quick stir and pour it over the bread.
      3. Allow the glaze to harden completely before cutting into slices.

Apple Banana Bread
Same as the banana bread EXCEPT

Ingredients:
½ cup apple sauce
½ cup banana

Apple Persimmon Bread
Same as the banana bread recipe EXCEPT

Ingredients
1/2 cup apple sauce
1/2 cup persimmon sauce
1 1/2 cups of sugar because above sauces are unsweetened
2 tsp of cinnamon
Use bread flour instead of all purpose

Notes: For different topping option, sprinkle with large clumps of brown sugar before putting in the oven. When the bread comes out of the oven, drizzle with honey

Homemade Apple Sauce
Ingredients
2-3 apples (peeled and sliced)
Enough water to cover bottom of pan

Instructions
1    1. Cook apples until soft
      2. Puree until consistency that you like 
      3. Optional: Add sugar to taste
