We Are Going to Get Fat

With fall, the fields turn gold. Sometimes when I drive home from work, I have to stop to enjoy the view. 


I've been trying to make a dress lately, too. I don't have a pattern, so Sam and I have been working hard to get it to fit me well. Here's the front of the bodice all cut out and pieced together. 


We've done a lot of cooking lately. The frost came in, so we saved the last bit of peppers and canned the left overs. Sam has SO many spicy peppers now. He's so excited.


Turkey broth


Turkey pot pie using the turkey broth. 


Herb bread crumbs to make into stuffing. 


Honey oatmeal loaf.

Cinnamon rolls


Here's the recipe for the POT PIE! (Adapted from the pioneer woman's recipe). 

INGREDIENTS
4 tablespoons butter
1/2 cup finely diced onion
1/2 cup finely diced carrot
1/2 cup finely diced celery
1 large potato
1 head chopped broccoli (optional) 
1/2 cup of chopped green beans
3 cups shredded cooked chicken (or turkey or pork)
1/4 cup flour
3 cups chicken broth (or turkey broth)
Splash of white wine 
1/4 teaspoon turmeric
Salt And pepper, to taste
Basil, oregano, and additional spices if desired
1/4 cup cream
1 pie crust (recipe below) 
 
INSTRUCTIONS
Preheat the oven to 375 F 
Melt the butter in a large pot and sauté the onions, carrots, and celery until translucent 
Add the rest of the veggies and stir for 3-4 minutes
Add the wine and stir until the wine is gone 
Add the meat and stir in the flour until well combined. Cook for 1 minute. 
Add the broth and cook until the mixture has thickened
Once thick, add the turmeric and additional spices
Add the cream and cook for about 3 minutes
Pour into a baking dish
Roll out the pie crust until thin and lay over top of the baking dish. Use a knife to make slits in the top of the crust. 
Bake for 25-30 minutes (if the pie crust gets to dark, cover with foil)


PIE CRUST RECIPE

INGREDIENTS
1 1/4 cups flour
1/4 tsp salt
1/2 cup butter, grated
1/4 cup water (preferably ice water)

INSTRUCTIONS
Mix flour and salt 
Cut in butter with fork until the mixture is crumbly 
Sit in water a little at a time. Knead until the dough is smooth. 
Refrigerate for 4 hours or overnight (optional :) )
