Miraculous Almond Flour

For all my diabetic friends and family members out there, this post is for you! Or if you are looking for a few low carb delicious breakfast treats, you've come to the right place. 

Needless to say, I have not enjoyed being on a carb limited diet because of my gestational diabetes so when I discovered the awesomeness of almond flour, I knew I had to share it with you. Now, almond flour can be a bit pricy but if you are like me, you are dying for some yummy breakfast options that aren't eggs. I give you: almond flour pancakes, almond flour waffles, almond flour blueberry muffins, and blueberry cheesecake oatmeal! (Note, for all of these recipes, be sure to eat with some protein to help stabilize your blood sugar). 

Almond Flour Pancakes


INGREDIENTS:
1 1/2 cup almond flour
1/2 tsp baking soda
1/4 tsp sea salt
3 large eggs
1/4 cup almond milk
1 tbs butter (melted)
1 tbs honey, maple syrup, or agave nectar
1 tsp vanilla
1/4 tsp apple cider vinegar
optional: 1/4-1/2 cup diced blueberries

INSTRUCTIONS:
1. Mix everything together.
2. Cook on a griddle or skillet as you would normal pancakes. Note, the almond flour will cook a bit differently so it will not bubble like normal pancake dough. They will also brown more than normal pancakes, but I actually like them slightly crispy on the outside.
3. Once cooked, lightly drizzle with honey or maple syrup, cover with peanut butter, or add more fruit!

serving size: about 8 regular size pancakes
2 carb limit: you can have two pancakes. Be careful with the syrup!

Almond Flour Waffles


INGREDIENTS:
1 cup of almond flour
1/4 tsp of salt
1//2 tsp of being soda
4 eggs
1 tsp of vanilla
2 tablespoons of honey, maple syrup, or agave nectar
optional: 1/2-1/4 cup of diced blueberries

INSTRUCTIONS: 
1. Mix everything together
2. Pour about 2/3 cup of batter into your waffle maker (or however much your waffle maker normally takes) and cook for about 5 minutes. 
3. Once cooked, lightly drizzle with honey or maple syrup, cover with peanut butter, or add more fruit!

serving size: with my waffle maker this recipe will make 3-4 waffles. 
2 carb limit: you can have one regular size waffle. Be careful with the syrup!

Almond Flour Blueberry Muffins

These are seriously some of the best blueberry muffins I have ever eaten. They are amazingly delicious! 

INGREDIENTS: 
2 cups of almond flour
2 eggs
2 egg whites
1/4 cup of honey, maple syrup, or agave nectar (Sam's mom used 1/2 mashed banana instead)
1/2 tsp baking soda
1 tbs apple cider vinegar
dash of salt
1 tsp of vanilla
2 tablespoons of oil or butter (melted)
1 cup of blueberries; diced

INSTRUCTIONS: 
1. Mix everything together except the blueberries. 
2. Gently fold in the blueberries. 
3. Lightly grease your muffin pan and evenly scoop batter into the pan
4. Bake for 25 minutes

serving size: 10-12 normal sized muffins. 
carbs: 7.5 carbs (1/2 serving) per muffin

Notes: these muffins do not rise as tall as regular flour muffins, so you can put more batter into the pan than when normally making muffins. 

Blueberry Cheesecake Oatmeal


With this recipe, you do have to be careful about not going over your carb limit, if you have one.  I would suggest making an entire batch but not eating an entire batch. 1/2-2/3 of this recipe will be about 30g of carbs (2 servings of carbs).

INGREDIENTS:
1/2 cup of oats
1/2 tsp cinnamon
1 tsp of honey, maple syrup, or agave nectar
1/4 tsp of vanilla
1 cup of water
1/2 cup of blueberries; diced
1 1/2 tbs cream cheese
1 tsp of honey, maple syrup, or agave nectar
1/4 tsp vanilla

INSTRUCTIONS:
1. Combine oats, cinnamon, maple syrup, vanilla, and water in a small pan and cook for about 5 minutes until the oats are soft.
2. Allow the oats to cool for about 5 minutes.
3. While the oatmeal is cooling, mix the cream cheese, vanilla, and maple syrup in a small bowl with an electric mixer until light and fluffy.
4. Add the oatmeal to the cream cheese mixture and gently stir in the blueberries.
5. Enjoy!
